Knafeh Nabulsi — often written kunafa, knafeh or kanafeh — takes its name from Nablus, the Palestinian city famous for it. The base is a mild, unsalted sweet cheese; over it goes semolina pastry toasted in ghee until deep gold, then a pour of syrup scented with citrus blossom and a heavy hand of pistachio.
Ours is baked in trays and cut when you order, never portioned in advance, because kunafa is only itself while it is warm and the cheese still stretches. It is the dish visiting guests compare to what they ate in the Middle East, and it is the easiest way to end a Palestinian meal in Winnipeg.
